Are you looking for fast, healthy and tasty cooking techniques and recipes to add to your “go to list?” Join AARP Hawaii and Chef Daniel Swift from Windward Community College via Zoom or Facebook Live for six free cooking demonstrations. We’ll send you the recipes ahead of time so you can cook along with Chef Daniel. Learn to minimize your time in the kitchen and add to your family favorites. Participate in one session or attend all six. The free cooking demonstration sessions is scheduled every Friday from September 4 to October 9, 2020.

Succulent Steaming (9/4)
Steaming is of the most overlooked and healthy cooking methods. It allows us to savor the natural flavors of our foods and enjoy them without the unnecessary addition of fats. In this demonstration you will learn how to use your rice cooker to make a complete meal in addition to your favorite rice.

Perfect Poke (9/11)
Poke is a favorite in Hawaii, and now around the world. Poke is fresh, versatile and delicious. Suitable to any type of diet, this quick and easy dish can be enjoyed year-round and at any time of day. Learn the primary components of any poke and get creative with creating your own.
Brilliant Braising (9/18)
Braising: The trick to making the tough tender is embodied in the braising technique. Starting with dry heat we sear our protein to seal in juices and create flavor. We then add liquid, cover and cook it low-and-slow. The result is always a tender and delicious dish that creates its own sauce, and the stove does all the work.

Great Whole Grains (9/25)
Whole grains have made their comeback and they are here to stay. Breakfast, lunch or dinner, they are happy to be a part of any meal. In this demonstration we will explore a variety of common whole grains and creative ways to make both sweet and savory dishes with them.

From Frozen to Fabulous (10/2)
Frozen convenience foods often get a bad rap, but there are many different products that can make your time in the kitchen more efficient while you still create a delicious meal. This demonstration will use frozen convenience foods to create a delicious and fresh meal that any chef would be proud to serve.

Signature Shortbread (10/9)
All things in moderation! Shortbread cookies are one of the more popular sweet snacks in Hawaii, especially when they are dipped in a little bit of chocolate. Many people don’t realize that it is the easiest cookie in the world to make. Whether you are an experienced baker or just a beginner, join us and learn how to make your very own signature shortbread cookie. Delicious!!! We’ll send you the recipe ahead of time so that you can cook along with the chef.

About Chef Daniel:
Chef Daniel Swift has worked in the restaurant business since 1985. He is a graduate of both the Boise State University Culinary Arts Program and the Wales University’s Baking and Pastry Arts program in Providence, Rhode Island. He has his master’s degree in Educational Foundations from the University of Hawaii at Manoa in 2005. He has taught Culinary, Baking and Pastry and Hospitality courses for the last 19 years at many institutions, including the Culinary Institute of the Pacific, the Collins College of Hospitality Management, and the William F. Harrah College of Hotel Administration in Las Vegas. He currently is the workforce development coordinator at Windward Community College, focusing on the areas of Hospitality and Food and Beverage education.
Daniel earned his Doctorate degree in Organizational Leadership from the University of Laverne in California in 2017. He is a Certified Master Baker with the Retail Bakers of America and holds certifications with the American Culinary Federation as a Certified Executive Chef, Certified Executive Pastry Chef, and Certified Culinary Administrator
